The traditional dish of San Lorenzo Dorsino is called ciuìga. It is a type of pork salami seasoned with boiled mashed turnip, and it is now a Slow Food presidium. The recipe dates back to the late 1800s when a local butcher, faced with food shortages, recycled meat offcuts bulked up with white turnip. The original recipe evolved over time and today ciuìga is made from selected pork meat with a small addition of turnip.
Don't miss the Sagra della Ciuìga fair celebrating this dish. It is held every autumn during the week spanning the end of October and beginning of November.
